Juice the lemon and set the juice aside. Mince the garlic cloves finely. Chop the fresh parsley.
Season the chicken breasts with salt and black pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
Add the long grain rice to the skillet and stir well to coat the rice with the garlic and oil.
Pour in the chicken broth and lemon juice. Stir to combine, then bring to a boil.
Reduce the heat to low, cover the skillet, and simmer the rice for 18-20 minutes, or until the liquid has been absorbed and the rice is tender.
Sprinkle the chopped fresh parsley and dot with butter over the cooked rice, then fluff the rice with a fork.
Serve the cooked chicken breasts over the savory lemon herb rice. Garnish with additional parsley and lemon slices if desired.
