Savory Oatmeal with Egg & Spinach

Ingredients

  • 1/2 cup Rolled oats
  • 1 cup Water
  • 1/4 tsp Salt
  • 1 large Egg
  • 1 cup Spinach, cooked
  • 1 tbsp Parmesan cheese
  • 1 tsp Olive oil
  • 1 slice Whole grain toast
  • to taste N/A Black pepper

Instructions

Bring the water and salt to a boil in a small pot. Add the rolled oats and reduce the heat to low. Cook, stirring occasionally, until the oats are soft and the water is absorbed, about 5-7 minutes.

In a separate small skillet, heat the olive oil over medium heat. Add the cooked spinach and sauté it for about 2 minutes until it's warm and slightly wilted. Set aside.

Using the same skillet, reduce the heat to low and crack the egg into the skillet. Cook until the white is set but the yolk is still runny, or to your desired doneness, about 3-4 minutes.

Once the oats are cooked, stir in the sautéed spinach. Season with black pepper to taste.

Serve the oatmeal in a bowl and top with the cooked egg. Sprinkle with Parmesan cheese.

Serve with a slice of whole grain toast on the side.
