Ingredients

  • 3 pieces large eggs
  • 1 cup fresh spinach
  • 0.5 cup sliced mushrooms
  • 1 tsp olive oil
  • 1 slice whole wheat bread
  • 0.25 tsp salt
  • 0.25 tsp pepper

Instructions

Crack the eggs into a bowl. Add 1/4 tsp of salt and 1/4 tsp of pepper. Whisk the eggs until well beaten.

Heat 1 tsp of olive oil in a non-stick skillet over medium heat.

Add the sliced mushrooms to the skillet. Sauté for about 3 minutes or until they are soft.

Add the fresh spinach to the skillet with the mushrooms. Cook for another 2 minutes until the spinach is wilted.

Pour the beaten eggs over the spinach and mushrooms in the skillet.

Gently lift the edges of the omelette with a spatula to allow uncooked egg to flow underneath. Cook until the omelette is set and slightly browned on the bottom, about 3-4 minutes.

Fold the omelette over and continue cooking for another minute to allow the inside to fully cook.

While the omelette is cooking, toast the whole wheat bread in a toaster until golden brown.

Serve the omelette with the toasted whole wheat bread on the side. Garnish with additional salt and pepper if desired.
