Ingredients

  • 18 oz boneless skinless chicken breasts
  • 9 cups mixed salad greens
  • 3 eggs hard-boiled eggs, quartered
  • 9 pieces cherry tomatoes, halved
  • 6 slices cooked bacon, chopped
  • 3/4 cup crumbled blue cheese
  • 1.5 avocados avocado, sliced
  • 6 tbsp vinaigrette or light ranch dressing
  • 2 tbsp olive oil for grilling

Instructions

Preheat your grill to medium-high heat and lightly oil the grill grates with olive oil.

Season the boneless skinless chicken breasts with salt and pepper on both sides.

Grill the chicken breasts over medium-high heat for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).

Remove the chicken breasts from the grill and allow them to rest for a few minutes before slicing them into thin strips.

In a large salad bowl, arrange the mixed salad greens as the base.

Artfully arrange the sliced grilled chicken, quartered hard-boiled eggs, halved cherry tomatoes, chopped cooked bacon, and crumbled blue cheese over the mixed greens.

Place the sliced avocado evenly across the top of the salad.

Just before serving, drizzle the vinaigrette or light ranch dressing evenly over the salad.
