  • 360 g, peeled and diced (about 2 small mangoes) Ripe mango
  • 2 pieces, seeded and finely chopped Jalapeño
  • 80 g, finely diced (about 1/2 small) Red onion
  • 24 g, chopped (about 1 cup loosely packed) Fresh cilantro
  • 2 limes, juiced (about 4 tbsp / 60 ml) Lime juice
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 4 tbsp (60 ml) Olive oil

Preheat and prep — Preheat your oven to 220°C / 425°F and line a rimmed baking sheet with parchment. A hot oven gives sweet potato cubes a fast, high-heat roast so their edges caramelize and develop concentrated sweetness rather than steaming and staying soft.

Season and toss the sweet potatoes — In a large bowl, toss the 800 g cubed sweet potato with 2 tbsp (30 ml) olive oil, 1/2 tsp salt and 1/4 tsp freshly ground black pepper. Spread in a single layer on the prepared baking sheet, leaving small gaps between cubes so air circulates and they brown evenly. Resist crowding — if the pan’s crowded they will steam instead of caramelize.
