Preheat the oven to 350°F (175°C).
Spread the stale bread cubes on a baking sheet and bake in the preheated oven for about 10 minutes, or until they are crispy but not too hard. Remove from the oven and let them cool.
In a large mixing bowl, combine the chopped tomatoes, chopped cucumber, and thinly sliced red onion.
Add the toasted bread cubes to the bowl with the vegetables.
Slice the grilled chicken breasts into bite-sized strips and add them to the salad bowl.
Add the olive oil and red wine vinegar to the bowl. Toss the entire mixture gently until the bread and vegetables are coated evenly.
