Add the cherry tomatoes, cucumber, red onion, and fresh basil leaves into a large mixing bowl. Toss them together.
In a small bowl, whisk together the olive oil and red wine vinegar. Season it with salt and black pepper to taste.
Add the toasted bread cubes and sliced grilled chicken into the mixing bowl with the vegetables.
Pour the olive oil and vinegar dressing over the salad. Toss everything gently until all the ingredients are well combined and the bread cubes absorb some of the dressing.
Let the salad sit for about 10 minutes, allowing the flavors to meld together. Serve at room temperature.
