Ingredients

  • 1 lb shrimp
  • 2 medium bell peppers
  • 1 medium onion
  • 1 tbsp fajita seasoning
  • 8 pieces flour tortillas
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lime juice

Instructions

Peel and devein the shrimp, then rinse and pat them dry with a paper towel.

Slice the bell peppers and onion into thin strips.

In a large bowl, combine the shrimp with 1 tablespoon of fajita seasoning, 1 tablespoon of olive oil, and lime juice. Toss until the shrimp are well coated.

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the onions and bell peppers to the skillet. Sprinkle with salt and black pepper. Sauté for about 5-6 minutes until they start to soften and slightly caramelize.

Add the seasoned shrimp to the skillet with the vegetables. Cook for an additional 4-5 minutes, stirring occasionally, until the shrimp are pink and opaque, indicating they are fully cooked.

Warm the flour tortillas in a skillet or microwave until pliable.

Serve the shrimp and vegetable mixture on the warm tortillas. Optionally, add toppings like sour cream, guacamole, or chopped cilantro.
