In a large skillet, heat 1 tsp of olive oil over medium-high heat.
Add the sliced onion and bell pepper to the skillet. Sauté for about 5 minutes or until they start to soften.
Season the shrimp with 1 tsp of fajita seasoning, and add it to the skillet. Cook for about 3-4 minutes until the shrimp are pink and cooked through.
Season with salt and pepper to taste.
Warm the 1/2 cup of cooked brown rice in the microwave or on a stovetop.
Serve the shrimp and pepper mixture over the warm brown rice.
Garnish with freshly squeezed lime juice and 2 tbsp of chopped cilantro.
