Ingredients

  • 100 g Cooked soba noodles
  • 120 g Firm tofu, cubed
  • 1/2 medium Cucumber, julienned
  • 1/2 medium Carrot, julienned
  • 3 tbsp Sesame dressing
  • 2 stalks Green onions, finely chopped
  • 2 tsp Sesame seeds
  • 1 tbsp Soy sauce
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Vegetable oil

Instructions

Press the tofu to remove excess moisture by wrapping it in a clean kitchen towel and placing a weight on top for about 10 minutes.

Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes.

Season the cooked tofu with soy sauce, salt, and black pepper. Stir well to coat evenly and remove from heat.

In a large mixing bowl, combine the cooked soba noodles, julienned cucumber, and julienned carrot.

Add the sesame dressing to the noodle and vegetable mixture. Toss everything well to combine.

Gently fold in the cooked tofu, ensuring it's evenly distributed throughout the salad.

Sprinkle finely chopped green onions and sesame seeds on top for garnish.
