In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and granulated sugar. Whisk until well mixed.
In a separate bowl, whisk together the milk, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it's okay if there are a few lumps remaining.
Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter, spreading it evenly across the surface.
Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
Carefully flip each pancake and cook for an additional 1-2 minutes until golden brown and cooked through.
Remove pancakes from the skillet and keep warm. Repeat with remaining batter, adding more butter to the skillet as needed.
Serve the pancakes warm, topped with mixed berries, and drizzle with maple syrup if desired.
