Transfer the chickpea mixture to a bowl and let it sit for about 10 minutes to firm up slightly.

Line a baking sheet with parchment paper. Form the chickpea mixture into small balls or patties, about 1.5 inches in diameter, and place them on the prepared baking sheet.

Lightly spray the falafel with cooking oil or brush them with oil to help them crisp up when baking.

Bake the falafel in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

While the falafel are baking, prepare the tahini sauce. In a bowl, mix the tahini, juice of 1 lemon, salt, and water until smooth. Add water gradually until desired consistency is achieved.

To assemble the wraps, take a whole wheat pita and fill it with a handful of mixed greens. Add 3-4 falafel balls on top of the greens, then drizzle with tahini sauce.
