  • 3 medium ripe bananas
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1.5 cups all-purpose flour

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.

In a large mixing bowl, mash the ripe bananas with a fork until smooth. You should have about 1 1/2 cups of mashed bananas.

In a separate bowl, melt the butter in the microwave or on the stovetop. Once melted, let it cool slightly before adding to the mashed bananas.

Add the granulated sugar and brown sugar to the banana mixture and mix until well combined.

Beat in the eggs, one at a time, and then stir in the vanilla extract.

In another bowl, mix the flour, baking soda, baking powder, and salt together.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; it’s okay if there are a few lumps.

Pour the batter into the prepared loaf pan and smooth out the top with a spatula.

Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.

Allow the banana bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
