Ingredients

  • 1 cup rolled oats
  • 1/2 cup mixed nuts (almonds, walnuts)
  • 1/4 cup dried fruit (raisins or dates)
  • 1 cup unsweetened soy yogurt
  • 1 cup fresh berries
  • 2 tablespoons maple syrup
  • 1/8 teaspoon salt

Instructions

Preheat a dry skillet over medium heat. Add the rolled oats and toast them for about 3-5 minutes, stirring occasionally, until they are golden and fragrant. Remove from heat and let them cool slightly.

Coarsely chop the mixed nuts. Combine the toasted oats, chopped nuts, and dried fruit in a large mixing bowl.

Add a pinch of salt to the oat mixture and stir to combine evenly. Drizzle the maple syrup over the mixture and stir until everything is well coated.

Spoon half a cup of the muesli mixture into a bowl or serving dish. Add half a cup of unsweetened soy yogurt on top.

Top the yogurt with half a cup of the fresh berries. Repeat the layers to create a second serving.

Serve immediately as a breakfast or a healthy snack.
