Start by preheating your skillet over medium heat.
While the skillet is heating, split the whole grain English muffin in half and toast it until golden brown, either in a toaster or on the skillet for a few minutes, turning occasionally to prevent burning.
Once the skillet is hot, add a small drizzle of oil to the pan (about 1 teaspoon).
Add the spinach to the skillet and sauté for about 2 minutes, or until wilted, stirring occasionally.
Push the spinach to the side of the skillet and crack the egg into the center of the skillet. Cook the egg to your desired doneness (about 2-3 minutes for a runny yolk, or longer if you prefer it more cooked). Season the egg with salt and pepper to taste.
If using cheese, place the slice on top of the egg in the last minute of cooking to allow it to melt.
Remove the toasted English muffin halves from the toaster or skillet. Place the sautéed spinach on the bottom half of the muffin, followed by the cooked egg (and melted cheese, if using).
Top with the other half of the English muffin to complete your breakfast sandwich. Serve immediately and enjoy!
