Smoked Turkey & Spinach Breakfast Sandwich (English Muffin)

Ingredients

  • 1 piece whole wheat English muffin
  • 3 oz smoked turkey slices
  • 1 cup fresh spinach (wilted)
  • 1 slice provolone cheese
  • 1 tsp butter or olive oil
  • to taste optional salt
  • to taste optional pepper

Instructions

Begin by toasting the whole wheat English muffin until golden brown and crispy. Set aside.

In a small skillet over medium heat, add 1 teaspoon of butter or olive oil. Once heated, add the cup of fresh spinach and sauté until wilted, approximately 2 minutes. Season with salt and pepper if desired. Remove the spinach from the skillet and set aside.

In the same skillet, place the smoked turkey slices and heat until warmed through, about 1-2 minutes on each side.

Assemble the sandwich by placing the wilted spinach evenly on the bottom half of the toasted English muffin.

Add the warmed smoked turkey slices over the spinach.

Place a slice of provolone cheese on top of the turkey slices. Optionally, return the assembled sandwich to the skillet and cover with a lid for about 1 minute, just until the cheese melts.

Top with the other half of the English muffin and serve immediately.
