Ingredients

  • 2 pieces large eggs
  • 2 oz smoked turkey
  • 1 piece whole wheat tortilla
  • 1 oz shredded cheddar cheese
  • 2 tbsp salsa
  • 1 tsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Instructions

In a small bowl, crack the eggs, add salt and black pepper, and whisk until well combined.

Heat the olive oil in a non-stick skillet over medium heat.

Add the smoked turkey to the skillet and cook for about 1-2 minutes until slightly browned and heated through. Remove from the pan and set aside.

Pour the whisked eggs into the skillet. Allow them to sit, undisturbed, for about 20 seconds, then gently stir with a spatula until they are softly scrambled.

Add the cooked smoked turkey back to the pan and combine it with the scrambled eggs.

Sprinkle shredded cheddar over the egg-turkey mixture and let it melt slightly.

Warm the tortilla in a separate pan or microwave until soft and pliable.

Place the egg, turkey, and cheese mixture in the center of the warmed tortilla.

Spoon salsa over the top, then fold the sides of the tortilla in and roll it up to create a burrito.
