Heat 1 tablespoon of olive oil in a large skillet over medium heat.
In a bowl, whisk together the eggs with salt and pepper.
Pour the whisked eggs into the heated skillet. Stir gently until scrambled and fully cooked, about 3-4 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil and sauté the baby spinach until wilted, about 1-2 minutes. Remove from skillet and set aside.
Lay a tortilla on a clean surface. Place 1/4 cup of scrambled eggs, 1/4 cup of wilted spinach, 1/4 cup of shredded cheddar, and 2 tablespoons of salsa on half of the tortilla.
Fold the tortilla in half to enclose the filling.
Repeat steps 5 and 6 for the remaining tortillas.
Heat the skillet over medium heat. Cook each quesadilla for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
Remove from skillet, cut into wedges, and serve warm. Accompany with additional salsa if desired.
