Prep and preheat: place a 10-inch ovenproof skillet (cast-iron is ideal) on the middle rack and preheat the oven to 425°F (220°C). Preheating the skillet ensures an immediate sizzle and lift when the egg mixture hits the pan — that shock of heat helps the edges set and the center rise.
