Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 tablespoons unsalted butter
  • 1 tablespoon vegetable oil

Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, beat the egg and then mix in the milk.

Melt the butter and add it to the milk and egg mixture. Stir until well combined.

Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; some lumps are okay.

Heat a non-stick griddle or large skillet over medium heat and lightly grease with vegetable oil.

Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip the pancakes and cook until the other side is golden brown, about 1-2 minutes more.

Remove pancakes from the griddle and keep warm. Repeat with the remaining batter.
