Ingredients

  • 6 oz roast turkey breast
  • 1/2 cup herb gravy (light)
  • 1 cup roasted potatoes
  • 1 cup green beans almondine (with sliced almonds)
  • 1 tbsp olive oil
  • 1 tsp mixed herbs
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 350°F (175°C).

Place the roasted potatoes on a baking sheet. Drizzle with 1/2 tbsp of olive oil, season with 1/8 tsp of salt and 1/8 tsp of black pepper, and add 1/2 tsp of mixed herbs. Toss to coat evenly.

Reheat the potatoes in the preheated oven for about 15 minutes until they are crisp and hot.

In a medium skillet, heat the remaining 1/2 tbsp of olive oil over medium heat. Add the green beans almondine, season with the remaining 1/8 tsp of salt and black pepper, and sauté for about 5 minutes until heated through and the almonds are slightly toasted.

While the vegetables are heating, warm the herb gravy in a small saucepan over low heat until hot, stirring occasionally.

Slice the roast turkey breast into thin slices and arrange them on a serving platter.

Pour the warm herb gravy over the turkey slices evenly, letting it soak in for an enhanced flavor.
