  • 1 medium, thinly sliced (white and green parts separated) green onion
  • 1/2 fruit, juiced lime
  • 1/4 tsp, plus more to taste salt
  • 1/8 tsp, freshly ground black pepper

Pat the salmon dry with paper towels and season both sides lightly with 1/8 tsp salt and a pinch of black pepper. Drying the skin and flesh ensures a good sear — moisture is the enemy of browning.
