In a medium saucepan, heat the milk over medium heat until warm but not boiling.
In a mixing bowl, combine sugar, all-purpose flour, and salt. Gradually whisk this dry mixture into the warm milk, stirring constantly to avoid lumps.
Continue to cook the mixture over medium heat, stirring constantly, until it thickens and is smooth.
Reduce heat to low, add cheese, and stir until the cheese is fully melted and incorporated.
Remove the saucepan from the heat and stir in vanilla extract.
Pour the cheese pudding into serving bowls and let it cool to room temperature. You can refrigerate for a chilled version.
Serve as is, or with a drizzle of honey or a sprinkle of cinnamon for additional flavor.
