Chicken and Vegetable Chow Mein

Ingredients

  • 300 g chicken breast
  • 1 medium bell pepper
  • 3 tbsp oil
  • 1 medium carrot
  • 1 medium onion
  • 3 cloves garlic
  • 200 g chow mein noodles
  • 4 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • to taste n/a salt
  • to taste n/a pepper

Instructions

Cook chow mein noodles according to package instructions. Drain and set aside.

Slice chicken breast into thin strips.

Heat 1 tablespoon of oil in a large pan or wok over medium heat. Add the chicken strips and stir-fry until fully cooked, about 5-7 minutes. Remove chicken from the pan and set aside.

While the chicken cooks, slice the bell pepper and carrot into thin strips. Chop the onion and mince the garlic.

Add another tablespoon of oil to the pan. Add the garlic and onion, stir-fry for 2 minutes until fragrant.

Add sliced carrot and bell pepper to the pan. Stir-fry for another 4-5 minutes until vegetables are tender-crisp.

Return the cooked chicken to the pan. Add the cooked chow mein noodles, soy sauce, oyster sauce, sesame oil, and ground pepper. Toss everything together, ensuring all ingredients are well combined and heated through.

Adjust seasoning with salt and additional pepper as needed. Serve hot.
