A comforting Mediterranean-inspired bowl of tender green/brown lentils, smoky roasted vegetables, and bright peppery greens, all brought together with a creamy, lemony tahini dressing. The dish balances earthy, nutty, and citrus flavors with a mix of textures — creamy lentils, caramelized veg, and crisp greens — making it a satisfying weeknight meal or elegant vegetarian main.
Rinse and sort the lentils. Place 1 cup dry green or brown lentils in a fine-mesh sieve and rinse under cold running water. Sorting removes any small stones; rinsing removes dust and surface starch so the lentils cook cleanly and don’t foam excessively.
Simmer the lentils for tenderness. In a medium saucepan combine the rinsed lentils and 4 cups water or low-sodium vegetable broth and 1/2 teaspoon salt. Bring to a gentle boil, then reduce to a low simmer and cook uncovered for 18–22 minutes until tender but holding shape. Use broth for extra flavor; cooking gently prevents breaking the lentils — you want creamy insides with intact beans for texture contrast with the roasted vegetables.
While lentils cook, prep aromatics. Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the finely diced half onion and a pinch of salt and sweat until translucent, about 4–5 minutes. Sweating (low-medium heat with salt) extracts sweetness without browning — that base flavor lifts the lentils and ties to the tahini.
Bloom the spices and garlic. Add the minced garlic, 1/2 teaspoon ground cumin and 1/4 teaspoon smoked paprika to the softened onion and cook for 30–45 seconds until fragrant. Make the lemon-tahini dressing. In a small bowl whisk together 2 tablespoons tahini, 2 tablespoons fresh lemon juice, the grated garlic clove, 1/4 teaspoon salt and a few cracks of black pepper. The mixture will seize and thicken — this is normal. Thin with 1–2 tablespoons warm water and whisk until silky.
