Ingredients

  • 1.5 cups canned chickpeas
  • 1 tbsp shawarma seasoning
  • 2 pieces whole wheat tortillas
  • 1 sliced tomato
  • 0.5 sliced cucumber
  • 0.25 cup pickled red onion
  • 2 tbsp tahini sauce
  • 1 cup lettuce
  • 1 tbsp olive oil

Instructions

Drain and rinse the canned chickpeas. Pat them dry with a paper towel to remove excess moisture.

In a medium-sized bowl, combine the chickpeas with shawarma seasoning, a pinch of salt, black pepper, and olive oil. Toss until the chickpeas are well coated.

Preheat a skillet over medium heat. Add the seasoned chickpeas and cook for 5-7 minutes, stirring occasionally, until they are slightly crispy and heated through.

Warm the whole wheat tortillas in a dry skillet or microwave for about 30 seconds until pliable.

Assemble the wraps by laying a tortilla flat. Spread 1 tablespoon of tahini sauce over each tortilla.

On each tortilla, layer half of the cooked chickpeas, sliced tomato, cucumber, pickled red onions, and lettuce.

Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.

Secure the wrap with a toothpick if necessary, and cut it in half before serving.
