In a bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of minced ginger, and 1 teaspoon of cornstarch. Mix well to create a marinade.
Add the 8 oz of beef strips to the marinade, stir to coat well, and let it sit for about 10 minutes.
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated beef strips and stir-fry for about 3-4 minutes, or until browned. Remove the beef from the pan and set aside.
In the same pan, add another tablespoon of vegetable oil. Add 2 cloves of minced garlic and stir-fry for about 30 seconds until fragrant.
Add the 2 cups of broccoli florets and 1/4 cup of water to the pan. Stir and cover the pan. Let the broccoli steam for 3-4 minutes until tender but still bright green.
Return the beef to the pan with the broccoli, pour in 1 teaspoon of sesame oil, and stir everything together until well combined. Season with salt and pepper to taste.
Serve the beef and broccoli stir-fry over 2 cups of cooked jasmine rice and garnish with sliced green onions. Enjoy!
