Peel and dice the potatoes into small cubes. Steam them along with the cauliflower florets for about 10 minutes until just tender.
While the potatoes and cauliflower are steaming, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
Add the ground beef to the skillet. Cook until browned, stirring occasionally, for about 7-8 minutes. Season with salt and black pepper.
In another pan, heat the remaining tablespoon of olive oil. Add the mixed stir-fry vegetables and sauté for 5 minutes until they are tender but still crisp.
Once the potatoes and cauliflower are done, drain and add them to the skillet with beef. Stir in the stir-fried vegetables and mix well.
Add the cheddar cheese to the skillet and combine well, allowing it to melt evenly throughout the mixture. Remove from heat.
For the side salad, mix the salad greens with sliced roast beef and dress lightly with low-fat Greek yogurt.
Serve the cheesy beef and potato stir-fry alongside the fresh salad for a balanced meal.
