In a large pot, bring water to a boil and add a pinch of salt. Cook the whole-wheat spaghetti according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the cherry tomatoes. Cook for 2-3 minutes until the tomatoes start to soften.
Add spinach to the skillet, stirring until wilted, about 2 minutes.
Return the cooked spaghetti and shrimp to the skillet. Add the reserved pasta water to create a light sauce and toss everything together. Season with additional salt and pepper to taste.
Serve immediately, garnishing with additional freshly cracked black pepper if desired.
