Cook the whole-wheat penne according to package instructions. Drain and set aside.
Season the chicken breasts with salt, pepper, and dried oregano on both sides.
Heat 1 tablespoon of extra-virgin olive oil in a grill pan over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F). Remove from pan and let rest for a few minutes before slicing.
In the same pan, add 1 tablespoon of extra-virgin olive oil and the minced garlic cloves. Sauté for about 1 minute until fragrant.
Add the cherry tomatoes to the pan and cook for about 5-6 minutes until they start to blister and soften.
Add the baby spinach to the pan and cook until wilted, about 2-3 minutes.
Return the sliced chicken and cooked penne to the pan. Add the remaining tablespoon of olive oil and toss everything together to combine. Adjust seasoning with salt and pepper as needed.
Serve the pasta in bowls and sprinkle each serving with grated Parmesan cheese.
