Ingredients

  • 4 oz shrimp, peeled and deveined
  • 3 oz whole-wheat linguine
  • 1 cup spinach
  • 0.5 cup cherry tomatoes
  • 1 tbsp olive oil
  • 1 clove garlic
  • 1 tbsp grated Parmesan

Instructions

Bring a pot of salted water to a boil. Add the whole-wheat linguine and cook according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, chop the garlic and halve the cherry tomatoes. In a large pan, heat the olive oil over medium heat.

Add the garlic to the pan and sauté for about 1 minute until fragrant. Add the shrimp to the pan and cook for 2-3 minutes on each side until they are pink and opaque. Remove shrimp and set aside.

In the same pan, add the cherry tomatoes and cook for about 2 minutes until they start to soften. Add the spinach and cook until wilted, about 1-2 minutes.

Return the shrimp to the pan and add the cooked linguine. Toss everything together until well combined. Season with salt and black pepper to taste.

Serve the shrimp linguine in bowls and sprinkle with grated Parmesan cheese before serving.
