Preheat the oven to 400°F (200°C).
In a large bowl, combine 1 pound of lean ground turkey, 1/2 cup of breadcrumbs, 1 large egg, finely chopped medium onion, 1/4 cup of ketchup, 1 tablespoon of mustard, salt, and pepper to taste. Mix well until all ingredients are incorporated.
Transfer the turkey mixture to a greased baking dish and shape it into a loaf shape. Set aside.
Peel and chop 2 large sweet potatoes into 1-inch cubes. In a separate bowl, toss the sweet potato cubes with 2 tablespoons of olive oil, salt, and pepper to taste.
Spread the seasoned sweet potatoes onto a baking sheet in a single layer. Place the baking sheet and the baking dish with the meatloaf in the preheated oven.
Roast the sweet potatoes for 25-30 minutes or until tender and slightly caramelized. Flip the sweet potatoes halfway through the cooking time for even roasting.
Wash and trim the ends of 1 pound of fresh green beans. Toss with 1 tablespoon of olive oil, salt, and pepper.
After the sweet potatoes have cooked for about 15 minutes, add the green beans to the same baking sheet. Continue roasting for another 15 minutes until green beans are tender.
Bake the meatloaf for 40-45 minutes until the internal temperature reaches 165°F (74°C) and the top is slightly caramelized.
Once everything is done, remove the meatloaf from the oven and let it rest for 5 minutes before slicing. Serve the meatloaf slices with roasted sweet potatoes and green beans on the side.
