Preheat the grill to medium-high heat. If you are using a grill pan, place it on the stove over medium-high heat.
In a small bowl, mix olive oil, lemon juice, chopped parsley, oregano, salt, and pepper. Stir well to combine.
Place the chicken breast in a shallow dish or resealable plastic bag. Pour half of the herb mixture over the chicken, ensuring it is well-coated. Let it marinate for at least 10 minutes.
Grill the chicken breast for about 6-7 minutes on each side, or until it is fully cooked and has nice grill marks. Remove from the grill and let it rest for a few minutes.
In a large bowl, combine the cooked quinoa, halved cherry tomatoes, diced cucumber, and crumbled feta cheese.
Slice the grilled chicken breast into thin strips and add it to the quinoa mixture.
Pour the remaining half of the herb mixture over the salad. Toss everything gently to combine.
Adjust seasoning with additional salt and pepper to taste. Garnish with extra fresh parsley if desired, and serve immediately.
