  • 5 small Turkey meatballs
  • 2 cups Chicken broth
  • 0.5 cup Acini di pepe
  • 1 cup Spinach
  • 1 medium Carrot
  • 1 stalk Celery
  • 0.5 medium Onion
  • 1 piece Whole grain roll
  • 1 tablespoon Olive oil
  • to taste N/A Salt
  • to taste N/A Black Pepper

Instructions

Finely dice the carrot, celery, and onion.

In a large pot, heat the olive oil over medium heat. Add the diced carrot, celery, and onion. Sauté for about 5 minutes or until the vegetables are tender.

Add the chicken broth to the pot and bring it to a simmer.

Once the broth is simmering, add the turkey meatballs carefully into the pot. Cook for 15-20 minutes, ensuring the meatballs are heated through.

Add the cooked acini di pepe pasta and the spinach into the soup. Stir gently until the spinach wilts.

Season the soup with salt and black pepper to taste. Let it simmer for another 5 minutes to meld the flavors.

While the soup is finishing, warm the whole grain roll in the oven at 350°F (175°C) for about 5 minutes until crispy on the outside.
