Ingredients

  • 12 oz Cooked chicken breast, shredded
  • 1.5 cups Cooked brown rice
  • 1.5 cups Canned black beans, rinsed
  • 1.5 cups Corn, drained
  • 1 cup Medium tomato or salsa
  • 1 medium Medium avocado, sliced
  • 4 leaves Lettuce
  • 1 medium Lime
  • 1/4 cup Cilantro
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1 tbsp Olive oil

Instructions

In a large skillet, heat the olive oil over medium heat. Add the shredded chicken breast and sprinkle with chili powder, cumin, salt, and pepper. Stir well to coat evenly. Cook for 3-4 minutes until heated through and fragrant.

Add the cooked brown rice, canned black beans, and corn to the skillet. Stir to combine and heat for an additional 3-4 minutes, ensuring everything is warmed through.

While the mixture is heating, prepare the toppings: slice the medium avocado and chop the cilantro. Slice the lime into wedges.

To assemble, place a lettuce leaf in each bowl. Divide the chicken and rice mixture evenly among the bowls, about 1.5 cups per person.
