Ingredients

  • 180 g salmon fillet
  • 200 g baby potatoes
  • 150 g broccoli florets
  • 1 tbsp olive oil
  • 1 tbsp fresh dill
  • 1/2 lemon lemon zest
  • 1/2 lemon lemon juice
  • 1 clove garlic
  • to taste N/A salt
  • to taste N/A pepper

Instructions

Preheat your oven to 200°C (400°F).

In a medium-sized bowl, toss the halved baby potatoes with 1/2 tablespoon of olive oil, salt, and pepper. Spread them onto a baking sheet in a single layer.

Place the potatoes in the oven and roast for 20 minutes.

While the potatoes are roasting, prepare the salmon. In a small bowl, mix together the remaining olive oil, chopped dill, lemon zest, lemon juice, the minced garlic, salt, and pepper to create a marinade.

Place the salmon fillet on a piece of aluminum foil large enough to wrap it completely. Pour the marinade over the salmon, ensuring it is well coated. Wrap the foil around the salmon to create a sealed packet.

After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven and add the broccoli florets. Drizzle with a small amount of olive oil, salt, and pepper. Toss to coat and ensure they are spread out on the sheet.

Place the salmon packet alongside the potatoes and broccoli on the baking sheet.

Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
