Fiesta Nacho Bean Bowl

Ingredients

  • 1 cup Caesar croutons
  • 1 tbsp taco seasoning
  • 1/4 cup jalapeños
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 1 cup nacho cheese sauce
  • 1 cup whole kernel corn
  • 1 can (15 oz) black beans
  • 1 can (16 oz) refried beans
  • 1 can (15 oz) pinto beans
  • 1 cup (cooked) Spanish rice

Instructions

Preheat the oven to 350°F (175°C).

In a medium saucepan, heat the refried beans over medium-low heat, stirring occasionally, until warmed through.

Drain and rinse the black beans and pinto beans. In a large skillet, add 1 tbsp of oil over medium heat, then add the black beans, pinto beans, and taco seasoning. Stir and cook for about 5 minutes.

Add the whole kernel corn and Rotel diced tomatoes and green chilies to the skillet. Stir and cook for another 5 minutes. Season with salt and pepper to taste.

In a baking dish, spread the warmed refried beans as the base layer.

Layer the cooked Spanish rice evenly over the refried beans.

Pour the bean and corn mixture over the rice, spreading it evenly.

Drizzle the nacho cheese sauce over the top of the bean mixture.

Top with jalapeños according to taste.

Bake in the preheated oven for 10-15 minutes or until heated through and bubbly.

Remove from oven, sprinkle Caesar croutons on top, and serve hot.
