Ingredients

  • 2 5-oz cans canned tuna
  • 1 pound baby potatoes
  • 8 ounces green beans
  • 1 cup cherry tomatoes
  • 1/2 cup olives
  • 4 cups mixed greens
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons capers
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Fill a large pot with water and add a generous pinch of salt. Bring to a boil over high heat.

While waiting for the water to boil, wash and halve the baby potatoes. Trim the green beans.

Once the water is boiling, add the potatoes and cook for about 10 minutes until tender. In the last 3 minutes of cooking, add the green beans to the pot to blanch.

Drain the potatoes and green beans, then rinse briefly under cold water to stop cooking. Set aside to cool.

In a large bowl, combine drained canned tuna, cherry tomatoes (halved), olives, and mixed greens.

In a small bowl, whisk together olive oil, lemon juice, capers, salt, and black pepper to make a dressing.

Add the cooled potatoes and green beans to the salad bowl. Pour the dressing over the salad, and toss gently to combine all ingredients.

Serve the salad immediately, ensuring an even distribution of ingredients and dressing.
