Ingredients

  • 500 g beef
  • 1 medium onion
  • 2 medium peppers
  • 2 cloves garlic
  • 4 cups beef broth
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 2 tbsp tomato paste

Instructions

Cut the beef into bite-sized pieces. Season with a bit of salt and pepper.

Chop the onion and peppers into small pieces. Mince the garlic.

In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion, peppers, and minced garlic. Sauté for about 5 minutes or until the onions are translucent and the peppers are tender.

Add the tomato paste to the pot and stir well with the vegetables for about 1 minute.

Return the beef to the pot. Add 4 cups of beef broth, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of dried thyme, and 1/2 teaspoon of dried oregano. Stir well.

Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the beef is tender.

Once cooked, taste the soup and adjust the seasoning if necessary. Serve hot.
