In a medium-sized pot, bring 2 cups of water or dashi to a gentle simmer over medium heat.
Add 2 tablespoons of miso paste to the pot, whisking until completely dissolved. Make sure the heat is not too high to preserve the flavors of the miso.
Add the firm tofu cubes to the pot and let them heat through for about 3-4 minutes.
Stir in the cooked brown rice and let it warm up for another 2 minutes.
Add the spinach and let it wilt in the hot soup for about 1 minute.
Season the soup with soy sauce, sesame oil, salt, and pepper to taste. Stir well.
Ladle the soup into bowls and carefully place the sliced soft-boiled egg on top.
Garnish with sliced scallions and enjoy the soup hot.
