Finely chop the garlic and green onions. Slice the mixed vegetables into bite-sized pieces if not already prepared.
In a large pan or wok, heat the vegetable oil over medium-high heat.
Add the garlic and ginger to the pan, sautéing for 1 minute until fragrant.
Add the shredded meat to the pan. Stir-fry for 5-7 minutes or until the meat is browned and cooked through.
Add the mixed vegetables to the pan. Stir-fry for another 3-5 minutes until the vegetables are tender-crisp.
Pour in the soy sauce and sesame oil, stirring well to combine all the ingredients. Season with salt and pepper. Continue cooking for 2 more minutes.
Garnish with chopped green onions and sesame seeds. Serve hot.
