Begin by preparing all the vegetables. Slice the bell peppers, broccoli, and carrots into thin strips or bite-sized pieces.
Mince the garlic and grated or finely chop the fresh ginger.
In a large pan or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the shredded meat and stir-fry for about 5-7 minutes until browned and cooked through. Remove from the pan and set aside.
In the same pan, add the remaining tablespoon of olive oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
Add the mixed vegetables to the pan. Stir-fry them for about 5-7 minutes until they are slightly tender but still crisp.
Return the shredded meat to the pan. Pour in the soy sauce and combine well with the vegetables and meat. Add salt, black pepper, and red pepper flakes (if using) to taste.
Continue to stir-fry for another 2-3 minutes until everything is heated through and well combined.
Serve the stir-fry hot over a bed of cooked white rice. Garnish with chopped green onions and sesame seeds.
