  • 3 slices Whole-grain bread
  • 2 medium Avocados
  • 6 units Eggs
  • 450 g Mixed berries
  • 1 tbsp Olive oil or butter

Begin by toasting the whole-grain bread slices in a toaster or under a broiler until golden and crisp.

While the bread is toasting, cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocado with a fork, season with salt, pepper, and red pepper flakes (if using), and set aside.

In a medium bowl, crack the eggs, add a pinch of salt and pepper, and whisk until well combined.

Heat olive oil or butter in a non-stick skillet over medium heat. Pour the eggs into the skillet and gently cook, stirring constantly with a spatula, until soft curds form and the eggs are still slightly runny.
