Ingredients

  • 3 slices Whole-grain bread
  • 2 medium Avocados
  • 450 g Mixed berries
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Red pepper flakes
  • 1 tbsp Olive oil or butter

Instructions

Preheat your oven to 350°F (175°C). Lay the whole-grain bread slices on a baking sheet and toast them in the oven for about 8 minutes, flipping halfway through, until golden and crisp.

While the bread is toasting, halve the avocados, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until smooth. Season with a pinch of salt and pepper to taste. Add optional red pepper flakes for extra flavor.

In a bowl, crack and whisk the eggs with a dash of salt and pepper.

Heat 1 tablespoon of olive oil or butter in a non-stick skillet over medium heat. Pour in the eggs and cook gently, stirring continuously, until they reach your desired consistency. This will take about 3-5 minutes.

Remove the toasted bread from the oven, and spread an even layer of mashed avocado on each slice.

Top the avocado toast with the freshly scrambled eggs.

Serve the avocado toast topped with eggs on plates, and add a side of mixed berries (150g per serving). Enjoy!
