  • 1 cup mixed berries (e.g., blueberries, strawberries, raspberries)

Instructions

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

In another bowl, beat the egg and then whisk in the milk and vanilla extract until smooth.

Melt the butter and allow it to cool slightly, then add it to the milk mixture and stir to combine.

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; it's okay if there are a few lumps.

Fold in the mixed berries gently to distribute them without breaking them apart.

Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to coat the surface.

Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
