Ingredients

  • 4 slices Whole-grain sourdough bread
  • 1 item Large ripe avocado
  • 2 items Large eggs
  • 1 tbsp White miso
  • 1 tsp Rice vinegar
  • 1 item Small cucumber
  • 1 tsp Toasted sesame seeds
  • 1 tsp Sesame oil
  • to taste N/A Salt
  • to taste N/A Pepper

Instructions

Bring a small pot of water to a boil. Once boiling, carefully add the eggs and boil for exactly 7 minutes for soft-boiled yolks. Prepare an ice-water bath.

Remove the eggs from the pot and place them in the ice-water bath to cool for 2 minutes. Carefully peel the eggs and set aside.

While the eggs are cooling, toast the whole-grain sourdough slices to your preference.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add the white miso and mash together until smooth. Season with salt and pepper.

Spread the miso-avocado mixture evenly over each slice of toasted sourdough.

Thinly slice the cucumber and place in a bowl. Add the rice vinegar, sesame oil, and a pinch of salt. Toss to coat the cucumber slices evenly.

Place the cucumber salad evenly over the avocado toast slices.

Cut the soft-boiled eggs in half and place one half on each slice of toast. Sprinkle with toasted sesame seeds and additional pepper if desired.

Serve the miso avocado toast with the cucumber salad immediately and enjoy!
