  • 1 block Firm tofu
  • 2 cups Mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 2 cups Cooked rice

Instructions

Press the tofu to remove excess water. Wrap it in a clean kitchen towel and place a heavy object on top for about 15 minutes.

After pressing, cut the tofu into bite-sized cubes.

In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.

Add the minced garlic and grated ginger to the skillet, and sauté for about 30 seconds until fragrant.

Add the cubed tofu to the skillet, and stir-fry for about 5-7 minutes, until it is golden brown on all sides. Remove the tofu from the skillet and set aside.

In the same skillet, add the mixed vegetables and stir-fry for about 5-6 minutes, until they are tender yet crisp.

Return the golden tofu to the skillet with the vegetables. Pour in 2 tablespoons of soy sauce and stir well to combine all ingredients.

Cook for an additional 2-3 minutes, allowing the flavors to meld together.

Serve the stir-fry over cooked rice. Enjoy!
