Rinse the brown rice under cold water, then cook it according to package instructions. Typically, it will require about 2 cups of water and 30 minutes to cook.
While the rice is cooking, prepare the shrimp by peeling and deveining them, if not already done. Pat them dry with paper towels.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2–3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil. Add the mixed stir-fry vegetables and stir-fry for 5–7 minutes until they are tender-crisp.
Add the cooked shrimp back to the skillet with the vegetables. Pour in the soy-ginger sauce and stir to combine, cooking for an additional 2 minutes until everything is heated through.
Once the rice is cooked, fluff it with a fork. Serve the shrimp and vegetable stir-fry over the brown rice.
Garnish with sesame seeds and sliced green onions before serving.
