Begin by preparing all your ingredients. Peel and devein the shrimp if not already done. Chop the broccoli into small florets, slice the bell pepper, and trim the snap peas. Mince the garlic and grate the ginger.
In a large skillet or wok, heat the sesame oil over medium-high heat until shimmering.
Add the minced garlic and grated ginger to the skillet. Stir-fry for about 30 seconds until fragrant.
Add the shrimp to the skillet. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the broccoli, bell pepper, and snap peas. Stir-fry the vegetables for about 4-5 minutes, or until they are tender-crisp.
Return the shrimp to the skillet with the vegetables. Add the soy sauce and season with salt and black pepper to taste. Stir-fry everything together for another 2 minutes to combine and heat through.
Serve the stir-fry over the cooked brown rice. Enjoy your delicious and nutritious meal!
