Ingredients

  • 150 g Grilled chicken breast
  • 3/4 cup Cooked quinoa
  • 150 g Mixed roasted vegetables (bell pepper, zucchini, red onion)
  • 30 g Feta cheese
  • 1 tbsp Olive oil + lemon vinaigrette
  • to taste N/A Salt
  • to taste N/A Black pepper

Instructions

Preheat your oven to 200°C (400°F) if you need to roast the vegetables. Otherwise, proceed to the next step.

If necessary, roast the bell pepper, zucchini, and red onion at 200°C (400°F) for about 20 minutes until they are tender and slightly caramelized.

While the vegetables are roasting, prepare the vinaigrette by mixing 1 tablespoon of olive oil with fresh lemon juice. Adjust the balance according to taste. Season with salt and freshly ground black pepper.

In a large bowl, combine the cooked quinoa and roasted vegetables. Toss them gently to distribute evenly.

Slice the grilled chicken breast into bite-sized pieces and add to the bowl with quinoa and vegetables.

Crumble the feta cheese over the salad.
